Tomato Salad


serves:4-6 adults prep time: 10-15min

4 large tomatoes, cut into chunks (or 4 cups of halved cherry tomatoes)

1 onion, chopped





1 ½-2 tbsp corn oil or olive oil

In a bowl, mix tomatoes and onion,. Add salt, pepper, oregano, and basil to oil (to taste) . Toss tomatoes and onion in oil mixture and serve.


Cream Of Tomato Soup

Serves 4 adults Prep time: 15 min Cooking: 20min


1/3 c butter

¼ c flour

¾ tsp salt

¼ tsp pepper

worcestershire sauce

2 c milk

½ c shredded cheese

2c fresh tomatoes (approx)

Melt butter in a small sauce pan. Add flour, salt, and pepper. Stir in milk; stir and cook over low-med heat until thickened. Add shredded cheese and worcestershire sauce to taste. Pulse fresh tomatoes in blender/food processor until liquid. In a larger pot, add cheese/flour mixture to tomato. Bring to a boil, then simmer for 15-20min. For thicker soup, simmer longer or add tomato paste.
